04 - Bake for 18–20 minutes, or until the edges are golden and the flatbread is set.

06 - Spread 2 tbsp pesto over each flatbread. Top with halved cherry tomatoes and sprinkle with black pepper and optional parmesan.
07 - Garnish with fresh basil, slice, and serve warm.

# Expert Tips:

01 -
  • This is a protein-packed flatbread you can whip up faster than delivery arrives.
  • The creamy cottage cheese makes each bite so tender, people never believe it’s good for you.
02 -
  • I once tried making this without parchment paper and regretted every moment scraping perfectly good flatbread off the tray.
  • Letting the base cool for a few minutes before adding toppings keeps everything from turning into a puddle.
03 -
  • Letting the cottage cheese batter rest for five minutes before baking makes it easier to spread and improves the crumb.
  • Don’t skimp on the fresh basil—those leaves truly bring every bite to life.
